Hawkins proudly carries the title of The Pancake Capital of Texas, a distinction deeply connected to hometown history.

This recognition honors Lillian Richard, a longtime Hawkins resident who served as one of the original models and ambassadors for the Aunt Jemima brand under Quaker Oats Company for more than 20 years.
​
As a promotional representative traveling across the country in the early 20th century, Lillian Richard became a nationally recognized face associated with pancakes, yet she always called Hawkins home. In honor of her legacy and connection to one of America’s most iconic breakfast brands, Hawkins embraced its identity as the Pancake Capital of Texas.

Today, that title stands as a tribute to local history, hometown pride, and the remarkable story of a Hawkins woman whose influence reached far beyond East Texas.

All event proceeds are allocated to the Hawkins Scholorship Program.
